Matlab in some way took place of Fortran. Memory management for simulation is highly appreciable. It is mostly based on mathematics and matrices and thats what is needed today to perform simulations. You can create your code in Matlab environment and compile them using various C/CPP compilers besides matlab's own M-compiler, which as a matter of fact provides 1024 bit encryption for your code. Using matlab you can create/synthesize every type of filters used in DSP. You can create GUI's, real time interfaces, data acquisition, Control system design, Robotics, financial tools, aerospace, Instrumentation, Mechanics - in short Matlab is sooo vast that you may run out of ideas or things you can do with it !!!!!!!

Now your question about embedded systems - yes it allows to cross compile many MCU and DSP processors - including C166 series MCU !!!!!

These days most of artificial neural networks, control systems , feedback loops are designed in Matlab.

Now books - plenty of them !!!!!
As you mentioned embedded and AI - I persume you belong to electronics field - so this one is the best book for you to start with -

MATLAB is a numerical computing environment and programming language. Created by The MathWorks, MATLAB allows easy matrix manipulation, plotting of functions and data, implementation of algorithms, creation of user interfaces, and interfacing with programs in other languages. Although it specializes in numerical computing, an optional toolbox interfaces with the Maple symbolic engine, allowing it to be part of a full computer algebra system.

As of 2004, MATLAB was used by more than one million people in industry and academia
